How do you change, after the game is complete, a hit to an error? I have tried to change it in the Pitch by Pitch, but with no luck.

Pitch by Pitch is the place to change it. Go to Game Manager, select the game, select Pitch by Pitch, scroll to the play with the hit, tap on it, then tap Edit next to the description of the hit and you should be able to change the reason the batter made it to base to be an error.

I have followed all of those procedures on many different occasions with other situations, but have never been able to change a hit to an error. For example, I had a player hit a deep fly ball to right, and the ball went in an out of his glove. My manager game him a triple. When the game was over, I felt it needed to be an error. In the Pitch by Pitch, going to the situation, I click on edit and the only items I am given are Out (which I cannot select if I wanted to) and Safe. The only two options under Safe are "Hit Triple" and "Double with Error". There are no other options.

If you change to Double+error, you can then edit that to single+error, and then to just error. Takes multiple steps, but can be done.
You would not be able to change an error to a triple though. When in doubt, score the multiple base hit then you can always change.

That is correct. First change to Double with Error, then edit again and you can change to Single with Error, then edit again and you can change to just Error.
